Few herbs are as loved as lavender. Grown for centuries across the hills of Provence and the Mediterranean, its fragrant purple buds have been used since Roman times, when they scented baths and linens. Its name comes from the Latin lavare, “to wash.” Lavender is traditionally used to calm the mind, ease tension and support restful sleep, and its sweet floral aroma makes it a favorite in the kitchen, bath and home. Ways to use it: Steep 1 teaspoon in hot water for 5 minutes for a calming tea. It’s lovely blended with chamomile or lemon balm. Fill sachets for drawers, closets and pillows. Add a handful to a warm bath or foot soak. Bake it into shortbread, scones or lemonade (a little goes a long way!). Infuse it in oil for homemade salves and lotions.
